Sixty-seven years later, milk from farms in Valle Brembana and the surrounding areas, with its distinctive qualities derived from the local forage and pastures, is still collected daily and delivered to the Latteria di Branzi, a historic dairy in the heart of the Cheese Valleys, recently recognised as a UNESCO World Heritage Site.
Branzi is produced using traditional cheesemaking methods, although with the support of modern, technologically advanced equipment.
