Forty years on, Giovanni Monaci renewed the challenge he had first embraced in the past and, with the help of his children, moved to Almenno San Salvatore with the aim of giving new impetus to Valle Imagna, a valley formed around the River Imagna and rich in potential. The new facility, equipped with state-of-the-art technology for the sector, has made it possible to expand the product range, which now bears the name of Valle Imagna.
Since November 2015, following the acquisition of Caseificio Battipaglia in Brugherio (MB), the Monaci family has also begun producing pasta filata cheeses, a speciality of southern Italy. Active since 1957, the historic dairy bases its philosophy on the use of traditional milk-processing techniques, specialising in particular in cow’s milk mozzarella, made according to the traditional recipe using whole milk, rennet and salt.
