Set against a spectacular alpine landscape at 1,800 metres above sea level, Alfio’s herd of nearly 100 cattle, including around 60 dairy cows, spends the entire summer grazing on mountain pastures, from early June until the end of September. This pristine environment provides the animals with the finest fresh grass, resulting in high-quality milk that is transformed into exceptional cheeses. Even during the winter months, when the herd returns to the valley, the cows are fed exclusively with forage harvested from these same lands, without the use of industrial feed.
The flagship product is Formai de Mut DOP, the traditional mountain cheese once used as payment for alpine pasture rent. During the summer, the dairy produces Formai de Mut Blu d’Alpeggio, while in autumn and winter it makes Rosso di Valle. The cows are milked twice a day, and the cheese is produced immediately afterwards using exceptionally fresh milk.
The complete range, available at the farm shop in Branzi—managed by Simona with great professionalism—also includes Branzi cheese, blue goat’s cheeses, formagelle, stracchini, a wide selection of goat’s cheeses, butter and yoghurt. Every product is made exclusively using milk from Alfio’s own herd.
