While waiting for the first mountain artichoke plantation to give the desired results, Italo Della Fara, owner of the homonymous farm located 800 metres away in the hamlet Bosco Fuori in San Giovanni Bianco, has created a new product based on cultivated and spontaneous officinal herbs. "Amarello" contains a dozen (the formula is naturally a secret) and has a particularity: it is non-alcoholic, therefore consumable for everyone, without side-effects. And the taste remains, perhaps less incisive (that is, warm) compared to similar alcoholic products, but the organoleptic complexity of the herbs explodes on the palate with the same strength. It gives the best of itself consumed cool, even "on the rocks".

 

Amarello is the latest (but it will certainly not be the last...) found by a company that is distinguishing itself in the panorama of agri-food production in the Brembana Valley. Since the business began, Italo Della Fara has in fact made it clear that only by producing something truly original and linked to the territory could it achieve economic sustainability. Why not try it up there, in the meadow surrounded by the woods purchased a few years earlier? The selection and reproduction of wild seeds already present in the territory took several years.

 

In 2011 the sowing started. Harvest after harvest, processing after processing, the improvements have been tangible. And now the products perceive a mix of quality and identity. The sauces, to be used as a condiment or to be served on bruschetta, are the house specialty. They are based on paruch (wild spinach), ramson (wild garlic), cornagìt (silene), mixed with walnuts, leeks, chilli peppers and more. Candied rhubarb in syrup or jam accompanies cheeses very well; or in an infusion with aromatic herbs it becomes a refreshing drink. The range includes jams with strawberries, elderberries and rose hip as well as cream of wild chestnuts, delicious.
