Description

In Brumano, at the foot of Mount Resegone, Mrs Pasquina opened her cheese factory 15 years ago. A few Bruna Alpina cows are the sole producers of the milk she sells directly to her customers.

 

Right after the milking, the temperature lets the milk coagulate by adding only rennet, with no other ingredient and without heating: a completely natural method. After ripening over 40 days we obtain stracchino soft cheese, a Slow Food Presidium labelled “Stracchino all’antica delle Valli Orobiche”.

It takes so much effort and experience to achieve such a result with such a limited production: approximately 5-6 cheeses per day.
