Latteria sociale di Branzi

Latteria sociale di Branzi

Description

Branzi is the name of one of the most ancient cheeses produced in the Orobie mountains. It comes from a village in the Upper Brembana Valley, where it has been produced for more than fifty years by the Social Dairy of Branzi – Latteria Sociale Casearia di Branzi.

Milk from the barns of Brembana Valley and Taleggio Valley is collected every day and processes using traditional methods. Skilful cheese makers are in charge of the processing phase of every single cheese, always caring about its genuineness.

The master cheese maker cuts the curd, manipulates the cheese and puts it in the traditional round-shaped moulds. After one day, he covers them with the “pata”, a traditional cloth, then salts them in brine. Three days later, he stores them into maturing stores.

The dairy products are the result of a network of 70 “ethical mountain farms”, carrying out a sustainable kind of farming that respects the animals and also allows them to live wild in the nature.

Would you like to know more about the cheese maker’s art, tasting the cheese right where it is produced and purchasing your own stock?
