Salva Cremasco D.O.P.

Description

Pictured on some decorative tiles dating back to the XVII and the XVIII Century, this cheese is linked to the cattle transhumance, which used to move to the mountains in the springtime and go back to the valley in autumn.

While traveling, the exceeding milk was used to make the so-called strachì da salva cheese (probably meaning “stracchino cheese to be saved”, as the Italian verb “salvare” means “to save”), so that it could be preserved and stored during summer.

This product was born to avoid wastes, and it managed to become a DOP quality cheese: not bad! 


Salva Cremasco is a raw cheese produced using whole cow milk and it currently comes in two sizes, between 9 and 15 cm of height. Its aging period is quite long (at least 75 days) and belongs to the “stracchino” soft cheese family.

Its texture is a little bit dry and sometimes friable, with milk, undergrowth, mushrooms and hazelnuts flavours. The Salva shape is a parallelepiped with a thin rind, very few holes and a straw-white colour. The crust does not undergo any processing than sponge baths with water and saline solution, grape pomace, food oils and aromatic herbs.

The Salva Cremasco cheese is excellent alone and used as the ingredient for numerous dishes, as well.

Salva D.O.P can be purchased in every cheese shop of the Bergamo province and it is used by every restaurants throughout the territory.
